Chicken Apple Meatballs with Dill

Inspired by the chicken apple sausages on menus this time of year, we’re down for these easy to make sweet and savory meatballs. When it’s apple season and the fruit is sweet and juicy, they’re perfect in just about everything. Have it with a side of rise or pasta or over greens.

1 lb. highest quality ground organic chicken

1 medium onion finely chopped

4 fresh garlic cloves, minced

1 cup bread cut in small cubes

2 apples chopped into ¼ inch pieces

2 tablespoons fresh dill finely chopped

Zest of one fresh lime

1 egg, beaten

¼ teaspoon kosher salt

½ teaspoon ground black pepper

½ teaspoon granulated garlic

½ teaspoon ground cumin

3 tablespoons olive oil

½ cup grated Parmesan cheese


Gluten free bread


1Combine all ingredients in a medium bowl and mix well. Shape meatballs into 1 ½ tablespoon size, making about 20 meatballs.

2Brush a thin layer of olive oil on a baking dish and place meatballs inside. Drizzle or brush the remaining olive oil over the meatballs.

3Sprinkle the Parmesan cheese.

4Bake uncovered for 25 -30 minutes.
